There are different "types" of Jedi
Guardian - Brute Force, combat focused, hit first, talk never. E.g. Anakin, Mace Windu - most Jedi
Consular - More focused on diplomatic studies and Jedi history. Yoda, Qui-Gon (i think).
Sentinel - The Jedi who goes undercover and uses their force powers in day-to-day situations (picking locks, defusing bombs, etc.)
There are more subdivisions, but that's it.
The Color of your saber doesn't mean anything - it's just a personal preference.
If it wasn't for the color contrast problems in Episode VI, then Lightsaber colors beyond Red and Blue would never have been a thing.

Considering the dude shown in Rey's vision who was killed by Kylo wasn't a Jedi, it seems that entire part with the Knights of Ren was just a battle on some other random planet after the Jedi were destroyed. The Starkiller should have just been a really big Star Destroyer, the biggest one yet. Its big enough to house the entire First Order as base of operations, and still has the power to absorb suns. No laser. They just fly in and start absorbing a sun while the guns and ties defend the ship, then they warp out and leave the system to freeze. That way we still get a spaceship battle to destroy the weapon without it being a third death star.

I mean, think about it. In the scene where he's talking to Vader's helmet, he asks it to "show him the power of the darkness" again, maybe implying that it caused him a vision much like what Rey experienced with Anakin's saber. That could've been what started him down this path in the first place, thinking the Force was giving him a message. And considering Snoke's role in turning him and what the First Order seems to stand for in general, it could be that he convinced Ben that only when Anakin became Vader did he start to bring balance by destroying the Jedi and bringing order through the Empire, and that he ultimately failed due to Luke's intervention, causing conflict throughout the galaxy long after Endor and a continued state of relative lawlessness up until the time of TFA. I'm convinced that he saw visions of Vader that contradict what he's heard about him his whole life, perhaps of him doing something honorable or outright good well before even being redeemed. The novelization establishes he is really long lived and have been around the block and seen shit.
If they go the path that he is an entirely new character it'll probably be revealed down the line that he is the originator of the Sith Lords or something. Which is in line with Aftermath.
If he is an established character (aka Plagueis), it'll probably turn out that he was Bane's apprentice or something.

If anything, it'll improve the pace of the film a ton. The film, while enjoyable, moves along at basically breakneck speed. There's hardly any down time. Adding in some scenes of the Senate will improve the pace and also help show the state of the galaxy in TFA better.

As it is, the pace could use some slowing down. It's really fast, especially the first act. It feels like during editing they wanted to get through it as fast as they could, because the second and third acts are also pretty briskly paced but they don't feel like they're glossing over things or hitting the story points too quickly like the first act.
