I'm not sure if a really young boy would like it, or at least begin watching it on their own, because of the more girly aspects. But around Halloween Daron reposted a lot of pictures of little girls dressing up as Star, like under 10 years old, so some kids that young must like it.

I think they'd enjoy it too, even though I wonder how much of the more dark/out-there jokes they're really getting at that age. Like, maybe they'd see Star as a cool girl/superhero instead of a kind of violent dork? Maybe Marco's karate could be seen as cool too.

the change in animation studios never really bothered me, at least not during the first watch of new episodes, but now every time I see one of the first ones I wonder what the entire series would've looked like with that animation style.

I'm not sure if I even noticed her being shorter until the later episodes. I'm sure there's a few screencaps from the earliest episodes that could prove me wrong, but they always looked really similar in height at first (I seem to remember people who made fanart of Star being noticeable shorter would say they were just doing it because they liked size differences, and not because of how she looked in the series itself).

Okay, I checked the first episode and the last, and the height could be almost the same throught the series. But, the issue is that even in the first episode the difference is not the same all the time. Sometimes they're the same height, and sometimes there's a gap between them.
