med. rare if done accurately is perfect for my taste. pink, maybe a hint of red in the middle, but mostly pink. in the US unfortunately most stake houses even will cook it about twice what you order and med. rare ends up well done, and well done ends up hockey puck. doing it yourself if best, but you know, everyone makes mistakes.

Also I didn't specify that juicier is always better. I just said rarer = juicier, which is true. The other person (was it you?) seemed to be arguing against that fact.

Generally people like a balance of juiciness and doneness, with most "food people" and chefs preferring rare to medium rare but that doesn't mean that's the "right" way.

The 20th century USA sucked if you like good food. US government taught all of the house wives that any meat that wasn't "well done" could kill their little Jimmy and Jane and make their husband very sick. Fish, Steak, Pork, Chicken, Tofu--- didn't matter. Cook it until it was well crisped. That's why everything got either ketchup or mayo or mustard dumped on it--- they cooked the taste right out of whatever they were cooking.

To do "home cooking", all the resteraunts and diners cooked their meat the same way.

But slowly, the fear that if the cook didn't incinerate every molecule of the meat made its way through the US mainstream mind, and with the fear of meat killing you removed, people drifted to less near burnt forms of cooking steak.

And if you want to know why grilling is so popular--- it was the only time you'd eat meat that wasn't nearly burnt to death. That was why it was so tasty, and why grilling became so popular. In fact, it helped drive the "nearly burnt" movement away. Why go out to an expensive resteraunt when you could stay home and grill something tasty? So the diners and resteraunts had to compete, and they started doing more varied cooking.

Sometimes when I get a really amazing piece of kangaroo meat, I don't even bother using seasoning. It's so flavorful of its own, and so juicy you can dip your potatoes in it afterwards.
