As for why it is, you're guess is as good as mine. Every community from Furries, Deviantart, to even /co/ have their own sense of things and somehow it lends to trends you can see in the artstyle.

I don't know exactly why people love drawing eyeballs with no folds or lids, rubbery mothball faces with no structure and limbs without joints, and characters that look like they have a stuff cold 24/7 but for some reason they do.

And even the hipstery art style itself ends up being extremely pretentious, since it attempts to come off as "artsy" but is always derivative and bad.

For noses I assume it's an attempt to look unique that kind of became mainstream. The nose is a part of the face that's not typically considered beautiful so messing with it is an easy way to make a character look different because it drastically alters their face. I'd assume the colored nose was a way to bring a bit more attention to that idea and it caught on to the point of practically being a parody of itself.

That's not to say that messing with the shape and tone of a nose isn't a great way to try out new character designs and artstyles, but obviously something is wrong when it becomes a sort of unwritten rule.

I'm okay with side-mouth, but I will never understand why so many of them--both from Tumblr and even actual shows--look like that, with the middle of the lips themselves positioned on the cheek and the lower lip coming up like that. It makes it look like the mouth is facing forward. I genuinely don't mind side mouth in general, but I hate the way a lot of artists are drawing it nowadays. It really shows that you shouldn't copy a style without first working through the framework of said style.

Wtf the "delicate sensitivities" rant was the best part of that episode. I will admit that I hated the Tiny Rick episode because it tried so hard to be funny it just came off as meme-y. Especially Morty's "get your shit together" bit.
