Will the MCU ever go full cosmic/magic? As in, will it let

First, to answer your question, probably, but don't expect any of the magic to be consistent, since that requires either extensive exposition, or string visual cues to explain the rules. Doubtful they;ll put any real effort into that.

Now on to this. Why do people whine about this? Science is the study and application of physical laws, and if magical forces have consistent rules that make it possible to reliably use, then it's really no different from technology.

The main issue isn't the fact that science is just the study of forces, with magic being one of those forces.

It's the fact that it's depicted as looking like technology as we understand it. Stuff like the bed in Thor 2, where they type on invisible keypads and Jane is just like 'oh, it's a quantum entanglement bed'.

Magic may simply be technology we don't understand, but those last words are key. Destroying that by having it be easily understood is what annoyed me about the Thor films.

I am actually pretty hopeful for Doctor Strange, though, I think we're gonna see some trippy shit.

The point of Doctor Strange's magic is that you have to study it a lot to get good at it. I feel like it should be studied like a science, of course, but it's an entirely new field of science that needs entirely new methods of study; not methods that look like the ways we study physics or chemistry, for example.

But the thing is, having everything being science makes it all dumb down. Thor should be the fantasy franchise with giants and viking boats in space. Turning it all sci fi makes it no more different from GOTG's stuff, which brings up the absurdity that three races in the universe are all normal humans. (Humans, Xandarians and Asgardians)

But Kirby depicted Asgardians as having spaceships, too. I get where you're coming from but Thor's depiction in the comics always had a pretty strong sci-fi element too until Simonson started going full fantasy, and even then, Simonson had his share of sci-fi elements.

It all kinda comes down to the fact that the MCU Asgardians are just super-advanced aliens as opposed to actual gods. They kinda fucked up the magic element by doing that, but that doesn't mean magic in the MCU doesn't exist at all. Feige has said multiple times that Dr. Strange is going to be the introduction of the magical side of the MCU like Thor and GotG were for cosmic. Hoping we get Dr. Druid in AoS and they go full wuxia for Iron Fist.

They've already said that Dr. Strange is going to be all about alternate dimensions a la the microverse/quantum realm. Just having a hell-like dimension ruled by Mephisto really isn't that much of a stretch at that point.
