Should I start reading Spider comics? There's always been an appeal for me, but I just hear so much shit about huge missteps in the franchise and characters being "ruined" that I feel like even if I start during "the good times" that it will just be a ticking clock until everything I became invested becomes terrible.

It's a long burn, if you read the good stuff and then the stuff people complain about in a relatively short period of time, it won't bug you too much. It's people who grew up with a certain status quo who get upset at shit the most. As a new reader, you won't have that problem.
I would read the Amazing Spider-Man omnibus by Stan Lee and Steve Ditko. Some of the best comics ever made and generally considered to be the Marvel bible.
Then, read the Death of Stacys and Kraven's Last Hunt. Two classic Spidey stories that will build off the omnibus you just read.
After that, you can pretty much google a reading order for JMS' run and read from there until where the comics are now, checking to Wiki for the occasional development that confuses you or asking /co/ for help.

Can a comic book adaption exist /co/? I could see it happen if they made it non-canonand inconsistent with it's own canonso Hammer and Publick wouldn't have to fret about the comic destroying the show's canon.

No I doubt they'd want it to be noncanon, they love their baby so even if they could be free of the whole "stepping on canonic toes" they'd want it to be the same quality they strive for.
Ultimately it just wouldn't be the same, there's a lot of jokes that rely on delivery and timing and that can't be worked into print.
Though if the worst ever happens and it's cancelled, I'd be cool with it going into comics.
It'd probably get released like once a year though.

My mother convinced me to go see "Finding Dory" simply because of the short "Piper" airing before the feature. I thought the full film itself was decent enough, but I agree with my own mother that the short itself was much more impactful than the movie. It was so technically impressive and also a good story told in a short amount of time.
Why doesn't Pixar release a series of shorts at a feature length run-time a la Fantasia? It seems like something up their alley. People (normies and etc) LOVE the shorts from Pixar.
