The poutine I fuck with these days is donair poutine. The delicate, tangy sauce and savoury kebab really give the dish a big boost.

Sometimes a little vinegar is a nice addition. The acidity helps round out the over whelming richness of the cheese and gravy.

I think a lot of restaurants approach to poutine is fucked, they add shit like bacon, chicken, lobster but can't even get a simple cheese and gravy poutine right.
