Avoid any brand with a shred disc that had any plastic parts on it.

Aim for the largest capacity you can afford.

Also, get the heaviest model for the strongest longest lasting motor.


Other than those things, consider fewer buttons, you really only need pulse and process at one speed, full.

I've used a Cuisinart before to make hummus. Skinned the beans and everything but I couldn't get it super smooth like commercial store bought hummus. Might try again in my Vitamix since that thing annihilates anything you put into it.

It's not the machine it's your technique. Don't just dump them in there all at once and hit go, add a few garbanzos at a time. This is how they do it at the israeli restaurant near me. I have a cuisinart and I get very smooth results this way

The rest make sense, except largest capacity if you don't have more than 2 people to serve.

I'm one person alone and I wouldn't make more than 1 cups worth of hummus a week, for example. If I get a big one, would the blades not reach half of the process ingredients?
