Why are green olives in jars and black olives in cans?
What are black olives anyways? they blow
Because cans are not transparent and therefore dark inside, the darkness rubs off on the olives and turn them black.
Jars on the other hand are made of gllass which is transparent and allows light to enter, making sure there is no darkness to taint the olives.

thank you mr scientist
black olives are just green olives which are oxidized with lye and other chemicals. I assume the light from store shelves would somehow discolor them
I haven't eaten olives recently. I don't think they are good for you. Very salty.

green olives are treated with lye so they don't taste bitter
black are never treated with lye
right about the oxidation though
I don't really know but all of these answers seem dumb, aren't they just different variants of olives? If you buy good olives they usually don't come in cans or jars and there are hundreds of different types of many different colours

black olives are green olives that ripen just like how green tomatoes are unripe tomatoes
