What is the herbs and spices combo you always go for? The one you add to your dishes almost without thinking?

For me, it's sage and thyme, which go in pretty much everything. I also add exactly 5 bay leaves to every dish with a higher water content (such a stews or soup).

As a side note, I'm curious to see if anyone here uses lovage and if you do, what does it go in?

Depends on what you're using them with
Thyme is universal, sage with pork and boar, rosemary and tarragon with beef, parsley for chicken and fish, dill for white fish are my fallbacks when inspirarion fails
Chillies are good fun, I used to have a garden with orange habs, scotch bonnets, nagas, and birds eyes. Curries, dips, fernented sauces, and a terrible mistake involving whisky.
