I'm going to Paris, Barcelona, Lisbon, and Dublin in April. What are some local dishes I need to try during my visit? What are some I shouldn't bother with?

Lisbon here, id say get seafood or fish, portuguese stew is also pretty nice (similar to pot au feu), a few tourist traps around but i guess it isnt worse than any other capital

They have open food markets where you can buy cheese, cured meat, vegetables, et cetera. Find a neighbourhood boulangerie outside the city centre and buy some fresh bread (should be made daily). A bottle of red wine (bordeaux). Probably go to a cafe one morning and drink a cappuccino out of a tiny glass and a croissant for breakfast. While your there, may as well try some North African food too to round out the experience.

Paella (which is actually from Valencia, but the Catalans have their own humble version), try Catalan brandy/wine, enjoy the unique architecture, catch some sun, hang out with the locals.

Irish breakfast, Irish coffee, go to an Irish pub, have fish and chips (they do that in Ireland too).
None of the cities you're going to are skint on good local cuisine. Paris the memeiest gastronomical destination. Just try as many things as you can and see what's around where ever you're staying.

If you are staying here between january and april go find some place that make Calçots. Delicious with Romesco sauce.

There is nothing more Catalan than Calçots.
If you are coming on Summer, like a previous anon said Paella is the usual thing although not from Catalonia. There is also the Esqueixada de Bacallà (https://en.wikipedia.org/wiki/Esqueixada)
