If your not used to their flavor, chop them up and add them to the onions you saute when you make tomato pasta sauce. The anchovies will kind of melt as you saute them, and they give a savory base flavor to your sauce. I never make it without them.
Also, I prefer them chopped up to put on pizza as well, whole fillets are too unwieldy on pizza.
The fillets are a must for topping Holstein schnitzel, though.
