The guy in the documentary, Morgan Spurlock, refused to released his food journal kept during the experiment.
Most likely, it was because he faked a lot of it.
He claimed that his McDonalds-only diet was 5,000 calories a day, which is impossible unless he purposely 3 super sized meals a day. Although, according to his 'rules', he only super sized when 'offered' by McDonalds employees.

In case no one knows, the reason why McDonald's food doesn't rot is because it lacks the moisture content necessary for mold to grow on it.
