The truth is, we Mexicans can't handle spicy food. We can only handle oily, greasy, meaty food that tastes like dirt.
The reason why we add onions and cilantro to our tacos is because we wanna make our meals slightly more refined and vegetable-y.

There's this authentic mexican place around where I live (I know it's authentic because it's cheap and constantly full of mexicans) and they have these bowls of peppers and onions that sit in this soy sauce like liquid all day (top bowl in left picture)

That shit is so spicy it will make your ears hurt. A friend of mine flew too close to the sun and almost passed out from the spice.
