If you could pick only 5 or so bits of equipment to cook with e.g saucepans sieves etcwhich you could cook a variety of different meals with what would they be?

Large Dutch oven, ~10" stainless skillet, ~10" carbon steel skillet, small saucepan, large (~2 QT) stainless pot. Knife & cutting board are a given.

This will cause a flame war but Le Cruset are great (but pricy), my mother has had hers for nearly 30 yrs with nary a chip, and I've had mine for nearly 10, all have received heavy use and abuse. If you live in the states you can find them at tjmaxx or Marshalls on the cheap.

Mine is from lamsonsharp and I love it, it's suffered 10+ years of abuse: http://www.lamsonsharp.com. Cooks Illustrated really likes the Victornox knives and their opinion on all things cooking is worth considering. They're inexpensive too boot: http://lifehacker.com/5390285/victorinox-chefs-knife-performs-like-a-100%252B-knife-for-much-less. Epicurean makes a great inexpensive cutting board.

As for the stainless cookware, save up some $ and spring for All-Clad, I've got a set that I cobbled together over years lurking tjmaxx & Marshalls for deals, as well as a hand-me-down set. They'll outlive you. Calphalon makes some good stuff too, but at their higher end and at that price they don't surpass All-Clad. And De Buyer makes excellent and affordable carbon steel pans. Bottom line, if you're looking at buying some cookware, spend some money on it. They're tools.
