I want to make twice-baked potatos, but I can't think of anything for the main course. Steak plus a big pile of topato and cheese seems like it'd be way too heavy.
Any suggestions?
thrice baked potatoes
try quad baked potatoes
Chicken. Season with garlic, lemon, and herbs (parsley, sage, thyme, rosemary, etc.). Sous vide ~150 degrees for 1 hour then throw in the oven alongside the potatoes for another 15-20 minutes.

I made twice baked potatoes stuffed with lobster for Christmas dinner, and they were a huge hit. I served them with steak and salad. If you want a lighter meat with twice baked potatoes, I'd do one of the following: pork tenderloin, salmon, or roasted chicken.
I feel like if you're making twice baked potatos it'll be tough not to have a heavy meal, but the previously mentioned chicken or maybe like cod or some sort of fish.

Yeah, but why intentionally double down by serving a big fucking steak.
