What kind of cutting board do you use?
I got a shitty plastic one but its too small so I wanna buy a bigger one.
What material do the cool kids use?

I actually just picked up a decent butcher block. It's solid and thick so it feels really sturdy. The biggest bonus is that there's no indented ridge around that makes it annoying to clean.
I prefer having two types of boards around: a wooden cutting board that I use for almost everything, and a plastic board for meats or fish. Don't get me wrong, it's totally fine to use wood for meat or fish, but having a second board makes it easy to keep things separate and avoid cross-contamination. Rather than go two wooden boards, I went with plastic that I can throw in the dishwasher.

I have several. Ranging from shit tier to god tier. The only thing you need to know about a cutting board is that the softer it is the longer your knife will retain it's edge.
Also Mineral Oil.

I'm going to replace my countertops with butcher blocks when it's time to replace them

Are you sure you're cool? You might be mistaken.
I'll just get the biggest wooden one I can find.
The linked ones are pretty but I dont like in america and I dont have room for a butchers block even though that would be cool as fuck to have.
Might get a granite platform to work on (not cut) too.

I just get the industrial ones.
You want big, there you go.

I got an unused big expensive Italian made cutting board at a thrift shop for practically nothing.
Usually I just make them myself out of whatever wood I have, but this one was really nice.
Personally, I use Jk Adams reversible. But boos should work the same. Cooks Illustrated likes the Acacia wood, so you might try that.
