hinted at this already, but didn't take the time to say why. Here's why:
Pork loin sucks, and its not meant to go in a slow cooker. You wanted pork shoulder, sometimes called butt or Boston butt. The shoulder is marbled with delicious fat and connective tissue that melts into gelatin when cooked long and slow, its amazing.
The piece of shit you bought is dry as fuck, stringy, and lacks flavor.
The crock pot will reach nearly boiling temperatures, lets say its 205 degrees F. Pork shoulder can take this, and needs this.
Your shitty loin cut will be utter garbage at that temperature. Loin should not go a single degree above 145 F or else you get dry, chalky, flavorless, and essentially ruined, meat.
Now do you understand where you fucked up? You bought a loin, so cook it like one. In the oven, and pink inside. Also plan on making a quart of gravy with your Sunday roast, because its still bland, boring meat.

Sirloin is too lean to result in a good slow cook.
It's better when grilled (chopped into steaks or rolled) or stir fried.
Shoulder and shoulder arm picnic (pork cushion) is what you slow cook.

Pretty shit cut of meat to be slow cooking OP. For best results, cut thin, maybe 1/4 an inch. Apply a dry rub of your preference and pan fry them until crisp.
Place pork tenderloin in a slow cooker with the contents of the soup packet.
Pour water wine and soy sauce over the top turning the pork to coat.
Carefully spread garlic over the pork leaving as much on top of the roast during cooking as possible.
Sprinkle with pepper, cover and cook on low setting for 4 hours.
Serve with cooking liquid on the side as 'or joo
