Cause they are kinda watery and meh. They make ok garnishes, you can put them in other stuff and if they are spicey you can make sauce but they literally never get better than they do when they are fresh and when they are fresh they are at best a crisp palette cleanser and at worst a bland tasteless tuber. Add it fresh to your soup for crunch maybe or eat it inbetween taco bites but what else?
Because the world, excluding Asia, prefers other crops that grow in the ground and that are more energy dense, e.g., potatoes, yams, cassavas.

All of the classic grandma dishes are disgusting overcooked slobber. People aren't over the food PTSD of their youth yet and avoid stuff like radishes, kohlrabi and brussels sprouts all together. People will rediscover them.

Man I fucking love radishes.
If you just eat them straight, they're really average. Very light and refreshing flavor sort of like a cucumber. To really get the 'umph' out of them, just stick them in a blender and turn it into a paste. It brings out that strong nasal overwhelming sensation you get with westernized 'wazabi' which in itself is basically just radish / horse radish.
If you really want to take it up a notch, put some mustard power and mustard seed in a plastic bag with some apple cider vinegar and let it steep in the fridge for a few hours. Then toss the mustard mixture in the blender with some radishes and get it all happy. Radish mustard is likely one of my favorite condiments now.

are one of my most favorite of all vegetables. So crunchy, so delicious, so versatile.
>mfw you mix shredded radishes, chives, a little salt and pepper, and cream cheese together and use it as a sandwich spread. (Goes really well with roast beef or roast turkey, or on an all veg sandwich as well).
