dumping pics from last night. Made another meat pie but this time I added eggs under the crust.
Ingredients:
1.3lb 85% ground beef
Small white onion diced and Carmelized
Small rushed potato mashed
4 cloves of garlic
Salt
Pepper
Eggs
2 frozen pie crust
russet*
I cooked the meat mix till it wasn't pink anymore then I drained some of the moisture/grease with cheese cloth, otherwise I worried it would come out soupy. I mixed in the mashed potato to act as binder then started filling the crust. I made dips in the meat with a spoon and added the eggs. I had to crack the eggs in a bowl to remove some of the albumen first because the whole egg was too big for the holes
I just got frozen pie crust from the store so I had to flatten one out to act as the top. worked easy enough with some mashing around

used some of the left over egg whites to give it an egg wash then it went into the oven at 400f for 30min
here it is done after 2 egg washes
glamour shot. I was lucky with the oven temp/timing. I knew I'd just take it out when the crust was visibly done, I had no idea how done the eggs would be though. they came out as creamy as I could have wished
