Are there any good books on cooking theory? Not a cookbook, but an actual book that teaches you the rules of cooking, what flavours work together and why. I want to break free of just following recipes mindlessly without any understanding of why im doing what im doing.

I dunno about book, but Alton Brown's Good Eats goes into a lot of the theories and science behind certain ingredients.
