Cast iron's strengths are at high-heat. I prefer to use it outside on a wood fire or stove, propane burner or charcoal grill. The smoke and splatter stays outside.

Do that inside, and you're going to have aerosolized grease all over your kitchen and floor. Not so fun.

I can take my cast iron out to the middle of the yard, and just have at it. The mess stays outside, and I can crank the heat up all the way. When I'm done, I can turn the skillet upside down and burn out any remaining food and grease. Try that inside on your gas stove.
