So I have a question and I'm not sure if anyone can answer but googling didn't yield anything.

Why does bread in Asia taste like shit? I lived in Japan for 6 months and Korean for 2 years now, and nothing even comes close to bread I had in the UK/Europe/US.

It's always more dense, the crust is never crusty but chewy, it lacks flavour, doesn't toast well, and just generally awful.

Is it the flour? Is it the water? Does living in gookville change my palate in some way? What is it?

I've tried fast food, pizza, all the way up to expensive artisan bread and it doesn't compare.

Also, I like their bread, it's thick and chewy. Good for making stuffed sandwiches, not good for much else.

But how does that affect bread being made today? I understand that for cultural reasons alot of the bread is shit but that cannot explain why ALL of the bread is shit, which is why I suspect there must be something in the ingredients/water making a difference.

I don't know what East Asia means. Is that just Korea/Japan? I'll admit tho I haven't had many baked goods from there.

As I said, I'm sure it comes down to the techniques. You probably know the basics of how to make bread. I'm making assumptions but many people probably own either a small oven or possibly no oven. They have more of a convience culture, that's why they have the best bread machines. Making really good bread is an art and the techniques have to be learned, you can't just grab flour, yeast, and water and turn out bread. The only Asian country that's well known for good bread is Vietnam and that's coz the French influenced their cuisine so much.

Bread in Asia seems to be considered a dessert type thing. Rice and noodles are the staple foods, not bread and potatoes. There's no place for bread in savoury dishes because of this, so bread just became a popular sweet snack instead, like a cake.

The other annoying thing is that even though they like sweet baked things, they almost never put chocolate with them. It's always red bean paste or dried fruit. Not much jam either.

The attitude to bread is really different. I remember seeing someone eating what appeared to be a plain loaf of bread and wondering why he was bread with nothing on it. Later on I tried some of that kind of bread and realised that it's sweet enough not to require anything with it. Still a pretty bland snack though.

In some bakeries you can find freshly made baguettes. Those are pretty much the only 'normal' bread I managed to find myself. Supermarkets appear to only have sweet bread.

paris baguette and tour les jours (whatever the fucking name is) are some of the worst places for bread.

The little ajumma run bakeries are okay though if you want asian style stuff. Most of the stuff is fried though. Korea has a weird fascination with fried dough though like churros, doughnuts, etc

Also croquettes.. they butcher the hell out of them by putting fish cake into them.

My wife is Vietnamese and she loves Kings Hawaiian rolls because they are --very-- similar in taste to Vietnamese bread.

The Japanese prefer a moister, chewier bread. In Yakitate Japan they attribute this to differences in saliva production but personally I think it's because the preference is for bread more like rice and mochi.

I actually love all the buns at my local ching chong shop, red bean paste is great, but poppy filling, and even cheese buns are delicious. Steamed stuff like poak buns are great too, but not strictly speaking bread alone.
