How are you cooking your pita? I just throw them on my baking stone preheated to 500. Takes about 4-5 minutes baking 4 at a time. They always balloon up nicely.
I only ask because I'm curious if you are using the cast iron pan method.

My oven only heats from above so I didn't even bother, I cook them with a regular pan (gave up using my cast iron too, it always gets rusty). I tried mixing flour with very hot water, 60% water, 70% water, cooking on medium heat, high heat, I tried to roll them thin, thick...nothing works.

I always fuck cookies up. Burnt on the edges, or undercooked in the middle. Things that go in pans are easier to bake.

Recipe

Okay, sure.
3 cups of flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1 teaspoon of salt
2 sticks of sweet cream butter, cubed
3/4 of a cup of granulated sugar, then 3/4 of a cup of dark brown sugar
2 large eggs, beaten
2 teaspoons of vanilla extract
1 bag of chocolate chips, then a cup of whatever else you want to add in there (for the ones in my picture threw in peanut butter chips)
-Preheat the oven to 350
-Sift the flour into a mixing bowl, then add the baking soda, baking powder, salt, sugar and brown sugar, then whisk them together.
-Whisk together the eggs and vanilla
-Add the cubed butter and the chips, then work them in by hand until you've achieved a mealy consistency
-Add the egg and vanilla, then work them in until the dough is fully formed
After that you can chill the dough first if you like or just go straight to baking. Just bake them until they start to go brown. If you like them soft then keep them in there for 10 to 12 minutes. If you like them a little firmer then up to 15 minutes should do it. Just look for the edges to go a darker shade of brown in that case. After they're done take them out of the oven and let them rest on the pans you baked them on for a minute or two, then transfer the cookies to a rack to cool.
