Why does gumbo lose so much of its spice after sitting in the fridge? I made a huge gumbo base about a week ago (froze most of it) and it was way too spicy for the first meal we had, and then two days later it was just kind of like grocery store salsa spicy. Is that normal?

Ger food? I like kraut and brats. And jägerkohl is pretty decent in winter.

Gumbo isn't really black people food just FYI, but served over sticky rice is just amazing.

Personally I like my fried chicken not super crispy, pan-fried, baked and served cold is god-tier IMO. Ham hock and black eye peas gets me pretty hard, as does fried and pickled okra. May be the white in me, but I've never gotten the appeal of the texture of chitlins, but I'll still give them a shot when the neighbors serve them. Kinda a Christmas season tradition.
