What spices/herbs are the most overrated?

Myself, I'd say sage, it's pretty neat but ultimately bland, I could do without it.

I think ginger goes really well with a lot of meat dishes, but it's one of the few spices I can't stand on its own.

Agreed, but there is merit in it's color. Just saiyin. For me cilantro is something that must be used sparingly. It doesn't taste like soap, but it overwhelms dishes imo. Sage is fairly shitty but has it's situational merits

Most overrated is chilli. People load up on it like the dish is a vindaloo because "Some liek it hot dude lmao" and complete ruin the balance. So many people believe that spiciness = flavour.

Mint has its place in drinks (and obviously gum, toothpaste etc), but I can't think of a single food that's improved by its inclusion, other than possibly tzatziki.

Mint can never blend into the background or enhance a flavour, it can only be front and centre, taking over the experience.
