Lima and butter beans are my favorite so I like to eat them just by themselves, and you can cook them just like you would a tough leafy green.
>pot of chicken stock with 2 tbs vinegar
>boil until tender
>add hot sauce to taste
I make a Black bean and corn relish that I put on my Chalupa.
I rinse a can of black beans and add roasted corn from the cobb and tomato, scallion, red onion and cilantro with some Lime and salt.
It makes a really nice mexican food topping.

Have you ever been to taco bell ? They have a Chalupa.
Chalupa is spanish for a boat shape, its basically a taco shell that is fried and crispy on the outside and soft on the inside.
