Apple pie season is upon us.

Do you add cheese to your apple pies? Why or why not?

anybody got a good apple pie tutorial youtube vid

i want to make one and struggle with dough
>>
>>7134354
I thought it was a British thing because apples weren't always sweet til recently and were usually paired up with cheese.

You're missing out senpai. Some people cook it into the pie but I think it's best on top.
>>
>>7134108
Not that kind of cheese you dip, I'm not even sure that's cheese in the first place.

Get some good proper cheddar.

Only in some parts of the country. Mostly New England or New York, I think. I'd never heard of it until it was mentioned on Mad Men.

2bh that seems like it could be delicious, I would go for some nice sharp yellow cheddar and not melty plastic squares though

This looks weird but I'm willing to try new things

The thing I will never understand is why out of all the cheese you could possibly use, do Americans always, without fail, pollute their food with the most disgusting artificial cheese they can find? It's honestly so fucking foul. Why not use a slice of mature cheddar?
>>
>>7134833
That's not a cheese singles slice, that's just melted mid-tier cheddar, probably red hoop cheddar or something.

>>7134286
You guys are so quick to assume it's plasticheese.
>>
>>7134871

It sure looks like plasticheese to me. Look at the right hand-side of OP photo. See how the edge of the cheese "slice" is kinda round? That's exactly what Kraft singles look like. Also the surface of the cheese is extremely smooth, which suggests that it came like that rather than being sliced.
>>
>>7134833
>Why not use a slice of mature cheddar?

European living in USA reporting in. In general, I agree with you 100%. "cheese singles" taste nothing like good cheese, and in general I would certainly select a proper cheese over that stuff.

HOWEVER. There's an important exception: the texture. Mature cheddar is tasty as hell, but it doesn't melt very well. For an application that requires the melty cheese you simply can't beat the texture of the lowly "single".

I personally don't get the "cheese on apple pie" thing. But I can certainly understand why they used processed cheese instead of a crumbly piece of proper mature cheddar.

Why is this always the standard response? Why do Americans know fuck all about what goes on in their own country? Do you never leave your home towns? Do you not see the rest of the country depicted in movies/tv?

For example, I'm from the south of the UK but I know about the cultural differences in the north, Scotland, Wales etc. I don't live in a bubble

My parents went apple picking and gave me like 3 huge bags of apples and I have like a whole bag left and the apples are over ripe
>>
>>7135028
No, not unless you want flavorless mush.
You want fresh, sour apples for a dessert.
>>
>>7135028

Make it into applesauce with a decent amount of cinnamon.

Or ferment them into cider or vinegar.
>>
I've never understood this.

It's like making a perfectly good PB&J and then adding bernaise sauce on the top. wtf?

I swear I've heard of people putting a fried egg on top of apple pie. Compared to that cheese sounds great.

>>
I'm suprised how many people are opposed to this... I haven't had cheese on pie, but I like really old cheddar with apple slices, so it makes sense to me. using american cheese is just gross though, its not the right flavor to compliment the sweetness.
>>
>>7134833
That's not an orange yellow square "cheese" slice thing. It's very obviously some kind of cheddar. If you can't tell the difference, you need to get some it to identify it when you make fun of Amerifats, otherwise, you're just going to sound like every other Yuropoor.
>>
Make apple pie, heavy on granny smith with a little honey crisp, lemon zest, lemon juice, honey, salt, pepper, and nutmeg.
Grate a relatively mild tasting cheddar on top and broil.
Add chopped chives.
Enjoy the best apple pie, you ungrateful little shits. Get off my lawn.
Seriously, it's good.
No, it's not like your typical sugar bomb apple pie, and that's the point.

Bleh my grandmother does this. She offered it to me once and it was the worst thing I've ever had since corn whiskey.
>>
>>7134108
I do not put cheese on my apple pie, my midwestern lard sack friend. It is only necessary for those who use shit apples in their pie. A pie made with excellent fresh gravensteins needs no accompaniment, not even a la mode.
>>
>>7134891

I don't think you can. As someone who has had it, the entire reason cheese on pie is great is the matureness of the cheese contrast the sweetness of the apple. If you use processed cheese you're just making it taste worse while making it even worse for you.
>>
>>7134373

Never heard of it but sounds good actually.

And everyone complaining about processed Kraft cheese, all that processing makes it melt better so for some purposes (cheeseburgers for example) they're preferred. It's also why your home-made mac and cheese wont be as creamy as a blue boxed one unless you add a shitload of emulsifying agents (http://www.seriouseats.com/2015/10/the-food-lab-fifteen-minute-stovetop-macaroni-and-cheese-recipe-food-lab-book-excerpt.html).

Nobody outside of flyoverville would claim that processed cheese is better than real cheese but it has its purposes. Do you immediately use fresh-baked baguettes for all things you would use bread for? Do you only use grass-fed kobe wagyu any time you want beef? Just because an ingredient is better doesn't mean its always best in all applications.

My man! Yes! The thing is I feel apple pie only deserves the BEST cheese. Try buying a block of the cheese produced by the Henning family ( Kerry Henning has master marks for Cheddar, Colby and Monterey jack - http://www.henningscheese.com/ ) and slicing it thin or grating it over your apple pie.

Eurofriend,

Just FYI, go to a deli and ask them to slice you some American Cheese from an actual block of cheese.

Kraft Singles are NOT cheese.
American Cheese is actually cheese, and has the same melty texture, but a FAR FAR FAR better flavor and isn't made of goat hooves and wax paper.

American cheese from a block is still fucking horrible. The only thing good about it is how easy it melts, but that doesn't really matter because it's too disgusting to use in anything.

It doesn't have any cheese flavor, it tastes vaguely milky and fake to me.

I've been making pie crust with some sharp cheddar in place of some of the butter/lard. The salty cheese and the apples go together in a cooked dish just as well as they do fresh, but you have to adjust the way you season the filling. Cloves/cinnamon/allspice + apples= good, apples+cheese=good, but cloves/cinnamon/allspice+cheese+apples=nasty.

I'd give it a go. Might be better with less cheese, grated on top so it cookes onto the crust and gets crispy and pretty?

Obviously you arent using whipped cream on that shit. Also this reminds me of the TV show Pushing Up Diaises that ran for about 2 seasons but was fucked because of the writers strike.

I really fucking liked that tv show. She would have the pie man bake apple pies with cheese on top and have them sent to her aunts who believed her to be dead. They really really liked cheese though.

Is this actually a thing? I always thought this was just a slang term people use in US restaurants when ordering pie. Why would you put cheese on a sweet pie? Everyone thinks it's plasticheese because that's what it looks like. If it's cheddar, it's crap cheddar.

Mid tier is Cabot Sharp.
>>
>>7139730
>Cabot

>>
I don't understand why shit-cheese apologists always bring up the melting thing. Better cheeses can also melt (I melt big slabs of hard cheddar on burgers and they're still medium rare. A lack of dripping down the sides doesn't hurt the burger any.) Shitty diner pie can have shitty cheese slices melted on top, but if you're making your own pie you may as well bake good cheese into the crust, or if melting on top, just grate it. Or hell, just have a less melted slice.
>>
>>7139739
?
I called it mid tier. You really think it's worse than that? You think Cabot produces cheese like in the OP? Because they don't.

There's a ton of better cheese. That cheese is the good stuff, the high-tier cheese.
