I have about 40 perfectly legal turtle eggs in my fridge.
What recipes does /ck/ recommend I try out? How about a turtle egg soufflé or an omelet?

Poached is good.
Listen, youve got 40 of em, that sounds like enough to experiment, fry one, scramble a few, id soft boil a bunch myself, see how they taste, if they work like chicken eggs and go from there, then maybe try an omlette or a soufle.

Try out some hard boiled, like quail eggs found in Brasilian restaurants, maybe make deviled eggs out of them.

People might be mixing up turtle and tortoise eggs. Turtles aren't endangered and eat eating their eggs isn't a big deal, tortoises on the other hand are different.

Whatever you decide to cook, can you post pictures of it?

/an/ here. Yes, there are some places were it's legal to harvest sea turtle eggs. They are allowed to harvest them from the first wave of turtles, because most of those eggs get eaten by predators or washed back into the ocean.

You act like there's only one kind of "tortoise" and only one kind of "turtle". Both are equally stupid.
SOME turtles are endangered. Others are not. Likewise for tortoises.
