Every time I've accidentally left my kettle water heating for for too long it sours the beans and leaves a very acidic and burnt taste that I end up covering up with sugar.

I end up stopping my kettle the moment I see steam, or else the it sours the coffee.

I've read that the calories in black or instant coffee (decaf too?) are "negligible" but I don't know what that means. 5cals a cup adds up if you drink multiple cups each day like I do.

So I have never been a coffee drinker. I had diner coffee once as a kid then noped the fuck out of there.

Recently at work we got an espresso machine and we got trained on how to use it and had to taste what we made. To be frank, I made some delicious shit. I figured it was just our fancy machine, but even starbucks tastes pretty gud to me now. I am coming to the idea that I like coffee now as long as its made somewhat right.

How should I start making coffee at home? I would like it to be of decent quality but i am also pretty poor. Do I buy a machine? French press? What beans do I buy? Just in general, where the fuck do I start?

I use moka pots pretty much exclusively and use a '6 cup' and a '3 cup' to make one large mug each morning, no cream but usually 2 lumps of sugar. Use all sorts of beans but my go to is actually Eight O Clock Colombian Peaks but always whole bean through my burr grinder. On the weekend I'll pour this into my travel mug and take to the bar for brunch, mixing in a couple of shots, usually one Gran Marnier and one shot normal brandy or cognac. This past weekend I tried that new kahlua mint with a shot of rum and it turned out well.

You start by going to a decent coffee shop, ordering an espresso, adding cream+sugar and then weening yourself onto black over the course of a month.
If you don't know what good coffee tastes like, you will fuck it up at home.

Buy good beans from a local roaster, f you live in a city of a decent size there should be a good one, if not go to your local third wave shop and ask them where to get good beans or see what they have for sale. At the shop ask them to grind your beans for a french press, because by now you should have bought a french press, it's the easiest home brewer to start to make great coffee and probably the cheapest as well. I would also recommend buying a small scale accurate to the gram so you can use your french press at a 1:15 ratio of coffee:water, look up tutorials online, they will show you how to do it.

When buying beans look for a medium roast, you want them to be a lightish brown colour and NOT shiny, look on the bag, a good roaster will include tasting notes, and a roast date, which you want to use the beans within a month of. Pic related is a general guide for what you should look for to start, they should also smell very good.

Alternatively, start with a drink like a Cortado, try and really notice which flavours you're picking up on other than the milk. If you are going to a good shop they will be using a coffee that has many nuances in flavour and if they're pulling shots correctly it should not be bitter or sour. Then try at home.

I'm drinking water at the moment. But the last coffee I had was Cafe Don Pablo's signature blend. It gets the job done. It's stale as fuck though; the roast date was in last July.

Straight black my family. Red eyes from the cute cafe by school when I need to wake the fuck up. I think I'll try a straight espresso shot tomorrow.

If you don't have any money then a hario skerton with a Orphan Espresso upgrade. If you do then get a Baratza Encore. Capresso Infinity isn't bad either. If you have the money go ahead and spring for a Lido 2 or Lido 3. You'll never have to buy another grinder again unless you get into espresso.

I have a really good Suke Quto natural that I have been enjoying the past couple days.

Aside from regular coffee or plain espress if I am having a "coffee drink" I usually have a doppio ristretto cortado "breve style"

Favorite method varies but usually Kalita Wave or Espresso.

Been drinking a lot of Africans a lot lately but I really like them all. I was on a Central American(mostly Panama) before that.

I like natural but my favorite is honey processed if its the right bean. Giling Basah isn't bad once it a while but it can get a bit funky for me at times.

That drink is basically just a Cortado modified to my preference the "breve style" just refers to using half milk half cream but everything else is the same.

You should try the Wave, its my favorite pour over by far.

I have a machine at home so I play around with it a lot and found I like the 1/2 heavy cream instead of the full milk in a cortado and I prefer the flavor of ristretto with it but its just personal preference.

Yeah, the GS3 is sick but damn its expensive.

There is a bit of a learning curve but its really very easy to roast its just getting it just perfect that takes a while. You can make decent enough beans for it to be work it and they are so much cheaper than the $15-$18/12oz-16oz for quality roasted beans so I think its worth it. You can get started with a $20 air popper and a bag of beans from sweet marias for super cheap. What I like about the roasted I linked is that is takes a lot of the guess work out and makes it super easy. With the air popper you really have to watch it and listen for first crack. I usually don't roast over Full City or Full City+

I live in Hawaii on the Big Island, there are Ka'u coffee farms within 20 miles of me. It's pricey but it's more in the range of $35/lb unless you're talking single estate peaberry organic stuff.
