It's like sunny side up but you tilt the pan to collect the fat and spoon it over the egg. A little more labor intensive than just putting a lid on it to steam the top.

At home, I'll fry them in olive oil, and ladle over the oil a bit (baste as another anon said). I love the frizzly bubbly crispy edges and the greenness of pressed olive oil flavor, but OPs picture is simply burned.

If I'm to vote on best way to cook eggs, probably going to be dutch baby, especially with lemon and powdered sugar. I'm a sucker for a great omelette with terrific cheese or special filling, like gyro-feta-spinach, or chunky homemade corned beef hash inside. Benedict gets my lemon love going as well, whether it's eggs Florentine or some other variation, it's about the sauce. I could enjoy huevos rancheros any time of any week. Eggs are just one of those things that aren't only best or right one way. Poached, fried, coddled, soft-boiled, scrambled, pickled, deviled, scotched, it's all good.

Scrambled is best, with sunny side up second. Over easy is stupid. I don't care for over medium and over hard but they're not stupid because they don't have the same god damned everything as sunny side up, unlike over easy.

Learn to cook them in butter in a pan, then learn on how to flip them.

Watch Julia child's video on how to make an omelette in 30 seconds and practice that, you will learn a lot.

If you are using non-stick spray, cooking at medium heat, covering the pan, waiting minutes, then you are totally fucking up

But in general, for me, medium-boiled eggs seasoned with olive oil, cumin, ground pepper, salt and a bit of vinegar are the best. I can easily eat a half dozen that way.

For pan-fried eggs like in the OP, I'd rather not let them brown, but lower the heat and turn the egg, so the yolk and the white are firm.
