What is the true king of fish dishes?

I have been buying various canned fish lately, its about time I moved on to pickled

I like pickled fish in general but rollmops is typically on the double plus sour end of things. Not a fan.

I bought matjes herring yesterday to try, expecting them to be salty and a little tangy, but they were just so sickly sweet to me. Are there any pickled herrings that are more savoury?

Generally speaking blue in nature means mold, fish need not apply.

Not so much that it shouldn't exist as much as that blue is an indication that you should beware. Biologically speaking anyway.
