The farmers market had these awesome looking purple cauliflower today. The employees tell me it's almost exactly the same as regular, just a bit creamier. Honestly, I couldn't tell the difference. They give a nice color contrast tho, and were the same price, so mise well.

Sniff it, if it smells fishy at all go for a sear. Otherwise sashimi it. I seared some YF and YT once with a kind of rub once that was really good. Was black pepper, ground ginger, cinnamon, olive oil and salt. There may have been more to it, but it was really good.

Add a little vinegar and it should bring the color back. I learned this trick cooking purple cabbage. This one time I made boiled cabbage potatoes and sausages and had a really cool purple broth leftover so I thought I would make gravy out of it because how fucking cool would purple gravy be? Whilst I appreciate the compliment - and thank you, ego fluffing is always nice - what I made is very easily replicated by nearly anyone with a shred of competency.

I've eaten at nice restaurants, and my cooking, while good and perfectly adequate for the home chef, is nowhere near the level of a good pro. I would not, in good conscience, feel that is a meal worth charging someone money for.

That said, if you are a cute waifu material, it probably is bj level worthy cooking. Maybe I'm wrong.

yeah, anthocyanins bleed and fade, leaving you with a grey-blue eventually. Red/purple veggies do look nice after a quick sear and a bit of citrus - taking on a magenta hue after exposure to acid.

I could be wrong, but I've been led to believe that by law here in Canada, any fish that may wind up less than well done (so, most fish, aside from something right from the fisherman) has to have spent a period at or less than -18C to kill any critters.

We've got lots of ocean, lots of lake, and lots of fish.

OP here btw, surprised this thread got rescued the way it did, but nice to see. I asked the 'monger if it was ever frozen, and he said roughly "this fish was fresh up from Florida, caught about 36 hours ago. It was never frozen, just chilled." I asked that aren't nearly all fish even flash frozen to kill parasites and he said "nah, wild caught tuna hardly ever has parasites. Farm raised is another story, but this is sushi grade level of tuna"

Take that for whatever it's worth.
