i've personally never had it, but i frequently hear keto people talk about it.
i guess you just bake the squash until it's tender, then fork out the inside.

I regularly use this instead of spaghetti, not for low carb, but because it tastes fuckin' good man. Do it as spaghetti bolognese with the fuckin' ground beef and some diced up onion and celery in the sauce for a few hours, tasty as shit.
Roasting method: Half inch water in oven pan. Place squash in pan, let it find it's own 'resting point' where it doesn't roll around too much. Cut a venting slit, lengthwise, so it doesn't explode in your oven when heating. Oven temp 300 degrees F. Roast for 3.5 hours. Check firmness at 3 hours, if it gives and outside color has darkened, you're getting there. Remove from oven, let cool half an hour. Widen venting slit (liquid will escape, so be careful when cutting). Remove seeds and off-color central strands. Remaining flesh can be separated by lightly running fork tines along. Drain (more juices will be removed). Now it's ready.

I've tried spaghetti squash before and it's good, but takes for fucking ever to cook. I'd still suggest it as a pasta substitute.
