How to?
literally vinegar and oil
Mayo + sour cream + whatever seasonings you want. Add garlic, onion powder, parsley, salt and pepper for a real basic ranch.

acid + oil is a good way to start
Oil, vinegar, minced garlic, salt, pepper, dijon mustard, maybe a little bit of honey, maybe some minced fresh herbs.
Whisk the fuck out of it.

How long do these keep?
Vinegarette
3 parts oil to 1 part acid, usually vinegar but you can also sub in citrus. If the acid is too sharp you can mute it a little with sugar. Add in herbs, spices to taste.
1 C Salad Oil
1/3 C White vinegar
1 Clove minced garlic
1/2 tsp salt
1 tbsp sugar
2 tbsp Italian herbs
1 C Salad Oil
1/2 C Shoyu
1/2 C Rice Vinegar
1 tbsp Mirin
1 tbsp sugar
1 tsp sesame oil
1/4 C toasted sesame seeds
