Left it in the fridge for 8 hours like the instructions said, basically fish jelly at that point.
Only had steel bowls (pic from instructions somewhat related) but thought they were non-reactive, guess I was wrong. Any co/ck/s out there who can share a non shit ceviche recipe?

only firm, white flesh, preferably sea fish. Tilapia is perfectly acceptable. Fresh. Marinate in lime juice for 20-30 mins maximum in lime juice, IN FUCKING EARTHWARE OR GLASS BOWL. use a glass bowl, don't use tomatoes and add bell peppers sliced in cubes. Mix everything and don't put it in the freezer leave it outside
