Other than the caramelisation of the onion and the addition of chillies, I'll be cooking this one as a geechee bean gravy to be served with rice. I'll also have a side of collards and am tinkering with the idea of baking up some cornbread to go with it all, as well.
Tonight, I'll be having linguine with spinach sauce and smoked provola, if anyone'd care to see that.

Actually, decided against the pasta w/spinach. Remembered I have some mustard cabbage that I should use up, some homemade veg broth that needs to go and some colder weather that's coming in tonight, so I'm making mixed vegetable stew with carrot, shallots, mustard cabbage, potatoes and chopped paprikas.

In honor of the Meat Cancer news, Chili cheese tater tots and a Bacon, lettuce and tomato sandwich(extra mayo).
poached egg spiced with cayenne pepper, fried spam, with siracha mayo white mayo and red onions.
>3 medium sized potatoes
>1/2 a red bell pepper
>1 small onion
Halve the onion and slice it very thinly. Slive the bellpepper.
Chop the potatoes into evenly sized half inch cubes, so that they cook evenly. Throw them in a bowl with some water, and cover it (so that they steam). Into the microwave for around six minutes or until soft but still holding.
While that is going on, heat some olive oil and sautée the onion and bellpepper with the rosemary. Salt to taste. Beat the four eggs very well. Add some pepper, and a pinch of salt.
Drain the potatoes, and into the pan, let them brown, barely. Add more oil if necessary. Throw in the eggs. Swirl and mix before it sets.
Cover the pan, and cook slowly, until edges brown, and the egg is set an inch from the border. Uncover, and pop in the oven at 150C ~ 300F until it completly sets. I like it barely browned so that the center is still runny.
Eat with a chicken steak in a whole sitting and hate yourself for the next two hours.
