Do you find yourself finding less appreciation for sweetness as you age?
I used to love sweetness in all dishes but now I find myself increasingly trying to dull it out in my cooking or outright finding dishes I try unpalatable because the sweetness is too overwhelming. I find it particularly awful in spicy dishes where the sweetness is more pronounced than the spice.
Even chocolate which I used to love I find myself opting for more savoury desserts over chocolate choices.
What's wrong with me?

I got like that. But then I just started eating the stuff my granny got from the Mexican bakery. It's less sweet and usually meant to be dipped in coffee or milk. Get yourself to a panadería, homie.
I only eat sweets as treats.
I can still enjoy a candy bar or some good ice cream but I don't want any part of a meal to be sweet.
I especially hate sweet sauces on meat.

Small children have a preference for sweet over anything else, but this preference disappears well before the global #2 kicks in.

It's called "koja", two rice cakes filled with short rib, kimchee, onions, sesame seeds, lettuce, and sauce. Like a sandwich or burger, but with rice instead of buns.
Was driving home from helping a friend move and decided to stop in at Kentucky Fried Chicken (the one on 12 Mile & Dequindre) and get one of their “Famous Bowls”, that consists of mashed potatoes, popcorn chicken, corn, cheese and gravy.
Right off the bat I'm annoyed; $5.00?! WTF, it's mostly (fake) mashed potatoes and the last time I got one (admittedly a few years back) it was only like $3.00 and secondly; I barely got anything for my money!
The bowl was barely half full and there were only 4 pieces of chicken.

cut in half. pressure cook in steamer basket for a little while = perfectly creamy potatoes.
The lowest calorie way is boiling them. I personally enjoy boiling them and eating them like an apple.
You can't really make them low Cal you just need to eat less of them.

Has anyone tried making matzah before? I tried once, and it basically came out like a sheet of flat, soft pretzels, instead of the cracker-like product you normally get in the store. Did I do something wrong, or is that was freshly baked matzah is supposed to be like?
I made them once. They're not like the shitty Manischewitz kind, but if you've ever been to one of those stores for the crazy hard core jews that think food imported from stolen land is more "holy", the homemade kind is not unlike the fancy kind you can sometimes get at some of those stores.
You might find that there's a similar thing with kosher wine. Manischewitz is just associated with kosher wine because people who are obsessed with stupid dietary laws tend not to give a shit about how good the food tastes. But there is actual kosher wine that doesn't taste like smuckers grape jelly mixed with sugar and rubbing alcohol. It's also pointlessly expensive and grown on stolen land and nowhere near the QPR of wine from people who aren't just following voodoo rituals. But since you asked, I pointed it out. Pls no ban.

Stew, chili or burritos will be your best bet. Just use any beef stew, burrito or chili recipe. Remember it's tough as hell so you'll need to cook it longer than beef.
Better make a stew with like 8h in the oven.
