I'm trying to bake french bread. It's very consumed here in Brazil. But they're usually sold as baguettes and I needed them round like hamburger buns.
I'm using
500g of wheat flour
10g of dry yeast
a spoon of sugar and a spoon of salt
And two spoons of, I don't know how to call it. It's a mixture to improve the flour quality.
200-250ml of water
I knead the dough until I can stretch it enough to see light through it.
The first ones I made didn't have a smooth crust, then I learned I need to spray water. Now the crust is smooth but they're shrinking and the dough is dense inside.
What am I doing wrong?

If it's too dense inside with just water as liquid, just give the dough more time to rise and relax.
How long do you proof before shaping and how long do you proof after shaping?

In a lot of old recipes, i.e. from the 1950s and earlier, you them list "mayonnaise or salad dressing" as an ingredient. What did they mean by salad dressing. Are they talking about "Miracle Whip"? Most commercial salad dressings (Ranch, Thousand Island, etc.) were not available until the mid-1950s.

Hmmm, that leads me to believe that "salad dressing" was something else. Kraft was trying to blend mayo and "salad dressing" / "boiled dressing" to make a cheaper alternative to mayo.

Chili is a sort of poor man's dish anyway, tomatoes, peppers, and meat were what was in the original, maybe some beans. I'd suggest finding a recipe that isn't too involved and start from there.
The best chili recipes will use blends of peppers, fresh ground meat, and almost nothing from a can...then simmer until done.

Big Macs taste like fluffy bread with sweet lettuce. I like those McD's breakfast sandwiches, sausage biscuit and sausage McMuffin (no egg). Cheap and tasty, but hella lot of calories. Great hangover food.
