More likely it's smooth because you have a vintage pan. Unless you're constantly using steel utensils and scraping bits of iron into your food, the surface won't get smooth for a very long time.

- Add acidity to your sauce. A splash of balsamic provides excellent contrast with the sweetness.

Tomorrow morning I have an interview at a restaurant in my hometown that has been opened and closed several times over the past few years. There was a murder/suicide at this restaurant in 2009 and ever since it's struggled to maintain a good image. I'm interviewing for front of house manager. If I get it, I have to move and possibly buy an auto. I'm planning on taking a lot of valium before so I am not nervous.
