How can i make carrot infused oil with a long shelf life?
Every tutorial on google or youtube has about a 3 day shelf life before it goes rancid for long infused carrot oil, but i have various uses for carrot oil including soap that id want to last for more than a few days in storage.
I've thought about dehydrating the carrots before infusing oil with them for a few weeks, would this help?

I don't have a good answer to your main question, but can assure you that it's not the water in the carrots that causes the oil to go rancid.

If you aren't making your sauce from your own meat drippins and love then just use goddamn Kraft original. There is absolutely no reason for the market to be flooded with this many highfalutin barbeque sauces. Kraft original is actually good too for what it is. It's tangy and smokey. Sauce shouldn't taste like liqour candy.

the 90's kraft bbq sauce had a really unique taste. it was very sour/vinegary, with lots of herbs and spices.

That's a sign of dehydration, salt makes it worse. Drink at least 3 liters of water every day and the cravings will diminish.
If you still experience cravings, sprinkle a little on your food, it will be easily tasted, satisfying the craving, without adding excess sodium
