I had some leftover food from the Middle Eastern place. I spread the baba ghanoush on some pizza crust, then added the chicken, and put it in the oven.

I feel like it was a tad dry though. What else would you add to this?

So for the first time ever, I made asparagus soup.

While the soup in itself came out alright, the white asparagus that are popular in my country/area require to be peeled.
I did peel them, but clearly not thick enough. The outside of the asparagus still felt hard and barky.

How does one find out that an asparagus has been peeled enough so you'll only have soft deliciousness?

Hrm.
I think of white asparagus in a cold marinated salad kind of application mostly. It's so delicately flavored, ya know? I know people do soup with it, but I'd have my cold :)
I don't peel asparagus, I bend it, and where it naturally breaks, that's where it had become too woody. Maybe since you're chopping it all up anyway, you could snap them like that, and then peel the hell out of the broken off bottom? If you want to rescue this already made batch, you could probably puree the whole thing.

Maybe it's the double layer of sear-sizzled 100% pure beef mingled with the sauce and melty cheese, the snap of the onion and the tart crunch of pickle. or maybe it's just that it's tall. either way, you so want one.

How do I roast just chicken breast so it has the texture and taste of charcoal chicken breast (I don't care about the skin / colour so much).

It's completely different to the texture of chicken breast cooked in a pan.

Can I just wrap it in foil and stick it in a toaster oven?

Who knows! I'd much rather go to a supermarket and get something like frantelle, like 70 cents for a two litre bottle.. But then again, I avoid buying bottled water at all costs, which is no issue since our tap water is so good in Canberra, and I am dilligent about carrying my water bottle with me.

I worked at a cinema once,and they sold bottles of pump for 6(!) dollars each,but idiots would still buy them.

Made my first stir fry today. Walmart only had the regular Oyster Sauce, not the Premium. America's Test Kitchen said to buy the Premium, and that it's better. What does /ck/ say?

I forgot to drain the meat after marinating it, so it fucked up the searing, which fucked up the flavor big time. The meat was also frozen and discounted/almost expired when I bought it, and probably not the best cut to use.

Veggies and sauce came out okay, though I forgot to get brown sugar and just used white sugar. I could taste it was off. Was my first stir fry.

Today I woke up early, grabbed some cheaper pork I got on a sale at the supermarket and proceeded to beat it with a short glass until it had the perfect texture then I run my fingers on it to find the way flthe fiber goes and cut in the opposite direction, I crushed two garlic cloves and chopped them and the equivalent on ginger then added some herbs, a teaspoon of sesame oil, honey some dry Chardonnay, I let it rest on the fridge for an hour and then proceeded to mix every half hour for the rest of the afternoon.
Before my guests arrived I made sure to drain every little piece of pork individually using kitchen papper and then lay it perfectly on the table with one plate with flour and an empty plate next to it, a cutting board with a bell pepper, an onion and zucchini with my knife I sharpened 1000 times and a bowl with rice I had to wash by hand on warm water 6 times because my guest wanted to "help cooking"
I coated the pork while they chopped the vegetables, I boiled the rice and heat up my wok and then fried the por on small batches on very high heat, I stir fried the vegetable while I entertained them and made a quick sauce with the marinade, soy sauce, hoisin sauce, oyster sauce, chilli oil and a teaspoon of sugar, we where eating less than 20 minutes after they arrived
Of course the food was delicious and I got the usual compliments like how come this is never so good when we order it in a restaurant or asking me again how to boil perfect rice.

I know you're not supposed to freeze your meats, and I don't freeze my meats, I usually smoke them if I want to preserve them, or just buy the meat a few days before hand and do the marinading then.

My question is though, what exactly does it do, and how could it ruin my cooking?

water in cells freeze, bursts cell walls and a bit of moistures leaks out when you thaw it. So the texture of your meat is different, sometimes a little big grainy.

Mince meat or meat that is stewed for a long time usually has cell walls severely damaged when cooked so it doesn't really have any effect on it imo.

Hey guys. What is the best cheap place to get frozen food in bulk...like, veggies, fruit, meat, and fish? I know this isn't ideal, but when I'm at college and don't have the time to go to the store, it's helpful to keep everything on hand. Fuck knows I need more quality proteins beyond peanut butter and need to stop eating out.

Oh, and what is the most versatile stuff I could bring with me to college? I like to experiment but am generally adverse to a lot of unhealthy staples people keep around (i.e., pasta, empty carbs in general, etc.).
