-2 28 oz cans of tomato (crushed is better for convenience, whole peeled tomatoes that you puree yourself will taste fresher) or equivalent of fresh tomatoes that have been peeled and pureed
-6-8 cloves of garlic
-1 large or 2 medium onions
-1 tablespoon of dry basil or 2 tablespoons of fresh chopped basil
-olive oil
Chop onion and cook over medium heat in olive oil until slightly caramelized. Use about 1/4 cup of olive oil, less if you're going to be cooking fatty meat in it.
Add chopped garlic and cook for about 1 minute just to soften it, you don't really want it to brown.
Add tomato. If using dry basil, add it now. If using fresh basil, add it just before serving.
Serve pasta with a ton of Parmesan or Romano cheese. If not using cheese, salt the tomato sauce to taste.
Optional ingredients: balsamic, fish sauce/anchovies, grated carrot, any meat.

I'm a "junk food vegan" myself, but I do have some healthier vegan tips as well.
I really like pea, rice, and hemp protein powder. Soy is good too. Chia seeds are perfect in oatmeal and give you extra nutrients like omega 3 fatty acids, calcium, protein.
Try tofu saag - it's delicious.
Also banana and oatmeal (and you can add whatever other ingredients you want, like raisins, cocoa, or cinnamon..) mixed together and shaped into discs make good (high calorie but healthy) cookies.
Sweet potatoes sliced into discs and topped with Tony's Creole seasoning are freaking bomb.
Be aware of sugar content in things like pasta sauce, ketchup, baked beans, even things like canned corn.
Try zucchini pasta. It can be pretty delicious.
Cashews make great sauces and cheeses. Many recipes on the internet for these.
My favorite way to eat tofu is to coat it in soy sauce, rice vinegar, black pepper, and garlic powder and microwave it (so I don't have to use oil).
Avoid oil - it's high in calories and not good for you.

I've been disappointed in almost all chicken tenders from fast food places. I like them battered like Long John Silvers and that's how I make them at home. The whole seasoned bread crumbs or flour just doesn't do it for me.

Making traditional French sauces takes a lot of skill. It's one of the hardest jobs. Also, it's a lot more pleasant of a workspace than standing directly in front of a hot-ass grill cooking meats thus it's a perk for the senior cooks.

Easy.
1) Pat the chicken dry. Why? Moist meat won't brown properly. Season chicken with salt and pepper.
2) Get a pan or skillet. But a little cooking oil in it. Get it hot. Put the chicken in it.
3) Listen. It should sizzle the instant it hits the pan. No sizzle? Take the chicken out and heat the pan up some more. Is it smoking? Turn the heat down. Use those two things--the sound of sizzle and the appearance of smoke--to control your heat. It should be hot enough to sizzle like frying bacon, but not hot enough to smoke.
4) Keep cooking until the bottom side is golden brown. Now flip it and repeat for the 2nd side.
5) Stick the whole thing (pan and all) into the oven to finish cooking. How long? Depends on how thick the chicken is, but about 12-15 minutes at 350 would be a good starting point.
