I hate to say this.... well not really. Most people who call themselves "chef", lets say 80%, are actually fucking hacks. I have only worked with one person who is actually a capital C Chef, i.e., works the line faster, can cook anything without a recipe, creative specials off the top of his head, can control a line of "LOL I'm a pirate" retards, knows how to calculate food cost, streamlines processes, etc.
Of the other "chefs" I have worked for, I would say 60% male 40% female, the males are mostly more like kitchen managers, as in they are great on the line and good at organizing prep and keeping people in line. The females are basically diversity hires who you would never want on the line during the rush but are good at coming up with cute ideas for specials/menu items. I'm sure that there are some good actual women chefs out there, but they will never be as good as a man. To be a real leader of men (and don't kid yourself, line cooks are 90% men), you have to have the aura of "this guy is better at my job than me, and could probably kick my ass". No woman can truly lead a group of alcoholic, testosterone fueled dudes. It just doesn't work that way.

Summer tier thread.
I've been experimenting with cumin. I never bought the seed before always the powder and used it when a recipe called for it.
I picked up some cumin seeds last night, came home and made a very basic curry (not really curry) (i don't use recipes most of the time)
-small onion diced
-can of plum tomatoes diced
-small clove of garlic thin sliced and melted in pan with onion
-half ground cumin seeds in my pestle
-few pinches of tumeric
-salt (pink)
-half cracked pepper corns
I simmered on med-high till everyone was soft then simmered for 45 minutes
Anyways when I was grinding the cumin the powerful, sweet, savory smell of the cumin hit me like never before (used to use powder)
What else can I use cumin for? I usually do simple stuff. Bake bread, simple dishes like one listed above.

Toast them slightly in the pan before you crush them then add that and the turmeric to the garlic and onions when they are about half done

I have high blood pressure. I haven't cut out salt, but I don't eat fast/convenience foods. I cook my own food and add just enough salt to make it taste good, and no more. Also I have borderline high cholesterol (middle aged guy who drinks), so I keep it in line with a mostly vegan diet. I do take pills for BP, but have so far managed not to have to take cholesterol meds.
I've got some frozen Alaska pollock filets and I want to make ratatouille with it. Do I need to defrost it or can I just throw it frozen into the sauce and let it cook?

You can fit quite a lot in an oven. Use multiple baking sheets.
Or the obvious answer: deep fry them. If you need to make big batch then use a big pot of oil.
