I overbrined a pork loin.

Like, double the salt I should've had (2 cups/gal rather than 1), and left it in the brine for like 11 hours.

I did TWO of these, like a jackass. I roasted one last night and it basically tasted cured like a ham.

I've got the other that I removed from the brine at the same time, but has still been sitting in the fridge all saturated with the brine for another night.

What's the best thing I can do with this? The best thing I can think of is a really sweet barbecue sauce and grilling it slow.

You can always wash it then soak in water to get that salt out. Or if you're bold, air cure it in your fridge. Pat it down every couple of days for a while until it dries nicely.

I might soak it, there is a LOT of salt in this loin at this point. It balanced well last night when I had it with very low-salt cauliflower mash and roasted peppers and onions.

I like trying different beers but when my choice is between 16 IPA's that are more than likely the same I usually end up going somewhere else and getting a Heineken. Has the whole craft market started to stagnate?

Why aren't brewers trying different things like lambics or wit beers or experimenting with different flavors? Juts always seems to be IPA's, is it the easiest to brew?

Soft serve is $6 for a 6oz cup or cone with various flavors.
Chocolixirs is our version of a frappe at $6.
We have "mix and match" sale of hand dipped items like bark and macaroons where it's 2 for $22 or 3 for $30.
A single truffle from our case is like $2 each on a scale.

Typical customers are either asian tourists from China, Taiwan, Japan, etc. But domestically it's like middle to upper middle class white and hispanic people. Rarely any black customers.

A typical customer is some rather rich woman who's either coming in for her monthly free truffle piece. She either has a kid or with her husband who doesn't really give a shit but supplies the money

I'm out of a job, working a shit temp job, and I need to budget until I'm back to making what I used to.

I just wrote this grocery list for what I think will feed me for a week for $30-35. What could I do better?

>18 oz oatmeal
>2Lb chicken breast
>1Lb ground beef
>2Lb of dry beans
>1Lb of dry rice
>1Lb spaghetti
>2 28oz cans of peeled tomatoes
>1 can of corn
>1 can of green beans
>1 onion
>2 Bell Peppers
>1 bottle chili powder
>2 Lb apples or pears
>8oz berries

Two pounds black beans $2.50
Bacon $4
Onions and garlic $1
Prices are rounded up. Cook this all together ( save a few slices of bacon) however you can (I use a pressure cooker). This is enough protein to last you most of a week.

Rice $2
Lentils $1
Peppers if you like $0.5
Canned tomatoes $0.7
cooked together pair well with the beans.

That's about $12. If your not too active this can easily feed you for a week.

I forgot to mention I put a little bit of tumeric on it, thats why the chicken may have an odd flavor.

I mainly bake from a nutrition/texture standpoint im not very picky about flavor so I dont use a lot of oil or pour sugary sauce on my food. I do usually order out pizza on weekends though.
