Require advice, /ck/. Am doing a burger cookoff on saturday, and I'm going to use a garlic and dill mayo I've mixed up. I want to incorporate horseradish as well, should I mix it in the mayo or into the ground beef? And is it a good idea to mix mustard into the beef? I'm going for strong, bold flavors, while trying to keep it simple.

Pig ears are fairly good, never tried snout or the rest but giving it a sous vide seems kinda dumb. Roast that shit like a real man.

anyone feel like all the stuff you sous vide has no soul? i did 36 hours short ribs and they were extremely tender and sound amazing on paper but they didn't impress me much. Maybe because the texture is too uniform?

I still like steaks sous vide, probably because I sear them after which gives them some character.

I work is a comfort food, southern food place that has live music every night. It's in Florida and it doesn't open until 6pm...then the ticket flood happens.

Can't really improve it, the menu is basic but all the prep is from-scratch so when we run out of something it's 86'd. For example, fried green tomatoes are all mandolined and hand breaded. I guess after hours prep cooks could be a nice addition so the staff didn't have to roll in at 9am for a 6pm dinner service...but whatever.

It's actually kinda cool, because we seat 80 seats, serve 80 seats and nobody leaves and the bands are good sometimes. But after everybody eats they just drink and it's all on the bartenders so we can do early cleaning. Technically the kitchen is still open but it's already scrubbed so when the doors close we walk.

Today's my cheat day and I'm starting with some Kroger brand strawberry cheesecake ice cream.

Cream cheese was pretty bland. Strawberry flavor was nearly absent.
>Mix-ins
Crust Pieces are good but almost non existent. Strawberry pieces were chunks of ice. Fresh fruit is almost always a bad mix-in.

holy fucking shit is this good. like fuck man, this is the best ice cream ive ever had. fucking christ I would murder people for a 10 gallon tub of this shit. fucks sake its so good. this will make you smack your mother in her whore face for another pint, its the equivalent of crack.

my only complaint is the brownie texture is weird but its because it sits in the ice cream.

1.5 pounds chicken breast
1 onion
1 red bell pepper
1 clove garlic
1 tablespoon canola/vegetable oil
1 tablespoon red curry paste
1 can coconut milk
4 cups chicken broth
Sliced/ground ginger to taste
1 tablespoon brown sugar
4 ounces (half a package) rice noodles
2 limes
1/2 cup fresh cilantro

Begin by sauteing onions and red bell peppers in oil. While sauteing, slice chicken into small strips.

After they are soft, add Ginger and minced garlic. Sautee another 30 seconds to a minute.

Add broth, coconut milk, brown sugar, and red curry paste, cover, and bring to a boil.

Add chicken to boiling liquid and reduce to a simmer. Cook for roughly 5-7 minutes until complete. Add noodles when chicken has completed cooking and let cook for 5 minutes.

Kill the heat, add juice of 2 limes and chopped fresh cilantro.
