srsly tho I use it for greens, like kale, collards, and Brussels sprouts. It gives them a nice hint of tanginess.

So I've been trying to bake bread but things are not working out for me. I have tried two no-knead bread recipes, the one from Lahey and the artisan bread in 5 minutes one.

The dough rises great and comes out with a great crust. There are a lot of air pockets in the crumb so thats all good.

However the crumb itself is like rubber and has little to no taste. I have tried many things like cooking it way longer, lower/higher temperature, longer/shorter with the lid on the pot. It always comes out the same.

What am I missing here, maybe I"m using bad flour?

I put the bread in a pot to contain the steam like a Dutch oven thing. I thought that was like the equivalent of putting water in the oven?

Also the picture you posted does not have my problem in it. Adding more salt to the bread is not helping at all in this case. Rubbery crumb isn't in there either, what am I looking at then? Too dense or poor texture? I have varied with salt, amount of water, amount of yeast, fermentation time and oven temperature already.

As far as I can tell those are pretty much the most important variables and it comes out exactly the same every single time.

I figure the whole no knead bread thing is a lie or this flour is not suitable.

So where *do* you get your iron from?

I'm having trouble with my steamed buns. They don't seem to be steaming correctly. If I put them in the steamer for too long then the dough goes soft and molten and gets really sticky and they get stuck to the parchment that they're sat on.
If I put them in for less time than this so that they're still fairly solid then they don't cook properly and they end up raw.
Either way, they don't seem to be steaming properly and don't end up tasting like the dough has finished cooking or steaming or whatever.

Recipe is:
250g plain white flour
1.25 tspn baking powder (5g)
1tspn instant yeast
1tbspn brown sugar
A pinch of salt
130ml milk (warmed)
1 tbspn vegetable oil
1/2tspn vanilla
I'm using mincemeat as the filling and combining it with flour so it doesn't make the bottom of the bun too soggy.

Method:
Mix the ingredients into a ball of dough, knead it for at least 10 minutes and then until I got bored, leave in the bowl covered with clingfilm and moist towel to let it rise.
Bash the air out, roll it out and make it into little balls, leave for another 15 miutes.
Roll the balls out, add filling, make into a bun and steam for 10-15 minutes.

Sounds like the exact opposite to me. As in, to get it cooked all the way through, you're having to leave it in so long the outside overcooks. Slowing it down would just exacerbate the problem.

Starting with boiling water is good. Everything I've read says to steam on a high heat, and I always crank the flame nearly to max.

Former whole milk drinker here.
I've pretty much switched to Silk Vanilla Almond. It is tasty as hell, and even with the sugar, lower calories. I made the mistake of getting unsweetened once. The trauma of drinking that is still costing my insurance company in therapy bills.

I do a diet of 500 or less calories per meal. Typically do a salad or sandwich with some fruit or veg for lunch, and soup for dinner. I occasionally do chicken breast/thigh or pork loin with Brussel sprouts or broccoli.

I know there are a few McD workers here so I've got a question for you.

I'm basically a permanent traveller and I eat McD breakfast more than I'd like to admit because it's consistent, familiar, usually easy and I actually rather like my standard order. However I'm not an early riser and often have to race to get to a McD on time.

Why can't I get a sausage and egg muffin at 10:31?

I know it's not because of anything in the cashier's terminal, sometimes I can in fact get a muffin at 10:31 because they have one left or something and they sell it to me. I once had a cheese burger and a hashbrown because they had the hashbrown left and its better than fries.

Likewise, sometimes at 10:25 they tell me they can't make one for me, they often ask the kitchen and get told no.

So it sounds like some irreversible process happens at back of house that would shake the universe to its foundations if it were to be violated. What is going on that makes toasting a muffin at 10:25+ the fast-food equivalent of dividing by zero?

I can confirm that Australia, HK and China both have 6am-10:30am breakfast. Well, might be 5:30am or something but they all close breakfast at 10:30am. Pretty sure that UK does too though it's been a while.

I don't think much of the world has 24/7 breakfast.
