Any of you guys eat at Amy's Baking Company before it closed down? Was it really as awful as the show made it out to be, or worse?

the food was awesome. every place on that show had decent food. the customers saw chef ramsay and were told to embellish their accounts of the cooking's badness

>trying to cook beans and meat
>spend 45 minutes just trying to defrost ground beef
>put half a pound into the skillet
>half of it ends up burnt, half uncooked because I didn't defrost properly.
>rush it and drop in two cans of ranch beans anyway

it's just... beans and meat how do I fuck up this bad

Let meat defrost at room temperature and if adding canned beans, add them in the very end because they're already cooked.
>>
>>7224634
Please tell me is there any way to save this? I just want the meat cooked but right now I've got a slurry of water, bean juice, and beans mixed in and the meat will just not brown.

>Let meat defrost at room temperature

OP do not listen to this Chipotle employee; that is how you get diseases. You defrost meat in the fridge, or in cold water which you change out every once in a while.

Also, do not ever use canned beans. Cook them yourself you lazy sack of shit.

Hey /ck/
I'm trying to pickle herring and managed to get everything but the herring. Surprisingly none of the places in town have it but I need to get pickling. Any suggestions for an alternative fish to pickle? Similar as possible if possible

I don't have a local butcher. Thank god I am moving next month to a place that does.

I went to the local butcher yesterday and they didn't even have any short ribs, said it would take a few days to get in. Like what the fuck. Got some really good peppered bacon though

Thought I found a real butcher but it turns out they're no better than a supermarket and their meat isn't good enough to warrant paying more.

I prep 16 lunches at a time every 2 weeks by making mass quantities of beans and rice.

Give me your best beans and rice tips.

In return I'll share mine:
Use dried beans.
Use the bulk beans, they're cheaper and just as good.
Most recipes call for way too much garlic- this will give you gastric nightmares.
Don't forget bay leaves.
If freezing, make sure the beans go on top of the rice.

Red and black beans make the best beans and rice.
Mixing bean varieties might lead to a variance in bean mushiness which is either a plus or a minus depending how you like your texture.
Rice cookers are awesome.
Rice and beans form a complete amino acid profile. You could survive on this dish alone for a very long time.
>>
How do you store it? What do you cook it in to be able to make that much? How much do you consider "a lunch"?

Why can't more females have self respect, like this one? Instead of spending all that exercise justifying being "big boned" they could be improving themselves.

inb4 I'm fat. No, I have an amazing physique. Also I just got home from the gym, it was delightfully free of NYresolutionfags because I picked the one in the most inconvenient location possible.

russet*

I cooked the meat mix till it wasn't pink anymore then I drained some of the moisture/grease with cheese cloth, otherwise I worried it would come out soupy. I mixed in the mashed potato to act as binder then started filling the crust. I made dips in the meat with a spoon and added the eggs. I had to crack the eggs in a bowl to remove some of the albumen first because the whole egg was too big for the holes

Campbell's chicken pot pie soup. I've been too lazy/tired to make real lunches, so I end up eating this shit. My blood pressure is through the roof from all the salt. I need to make some real soup soon. Probably potato leek, since it's so easy.

Lentel

So I want to start bringing my lunch to work for the reasons of saving a little money and eating healthier food. Don't want to bring a mess of tupperware I need to dick around with either, so I was thinking a wrap of some kind and just putting it in foil. It's not messy to eat, easy to just throw away the foil, sounds good, right?

I don't want to use tortillas though. They're stupid high in empty calories and I feel there could be a better solution. I was thinking lettuce, but it takes a lot of work to wrap it properly; steaming so it's pliable, using a paring knife to cut the spine so you can fold it, possibility of it breaking and causing a mess while you eat... no thanks.

What else could I use as wraps? I was thinking rice paper but, but can't help feel there might be something better out there.

Also, what's your favorite kind of wrap to eat?

>>
Can't you just make the wraps yourself with your approved flours/materials? Buckwheat crepes might be worth looking into if you're concerned with 'empty calories'.
>>
>>7224226

Wouldnt crepes be too sweet for a wrap?
>>
Well, the point of making them yourself is so you control the ingredients. Just don't put sugar in.

Savory crepes are also quite common, just so you know. You can put herbs in the batter too, which is nice.
