If you aren't doing dishes immediately after eating then you're doing wrong.
I don't always do them immediately after I eat, sometimes an hour or two later, sometimes if I'm feeling particularly lazy or tired I just rinse them off and leave them in the sink to do the next day.
I never let dirty dishes stack up for days or weeks at a time though.
