Bought a bag of potatoes a few days ago and just up a couple for cooking and saw these veins and spots. Is it pink rot? Safe to cook and eat? Should I cut into the rest to check for the same? Take back to store? They look normal on the outside....

What are some popular food items or dishes that, for some whatever reason, you have NEVER eaten? Not once, not twice, but never.
Or, alternatively, is there anything that you first tried embarassingly late in your life?
Pic related. I have literally no idea what it tastes like. I also ate melon for the first time at the age of 21, and my friends still make fun of me because of it.
I have also never ever eaten anchovies, refried beans and avocados.
